You open the pantry and your honey has turned thick, grainy, and almost solid. Before you toss it, good news: crystallized honey is completely normal, and it's still good to eat.
Why it happens
Honey is mostly sugar, mainly glucose and fructose. Over time, glucose naturally separates and forms small crystals. Honey with higher glucose content, or honey stored in cooler spots, tends to crystallize faster.
How to make it smooth again
- Place the jar in a bowl of warm (not boiling) water.
- Let it sit for 15 to 30 minutes, stirring occasionally.
- Repeat if needed until it's runny again.
What to avoid: Don't microwave it on high or use boiling water. Too much heat can dull the flavor.
How to slow it down: Store honey at room temperature in a tightly sealed jar, away from the fridge.
Some people actually prefer the creamy, spreadable texture of crystallized honey on toast. Think of it as a bonus.
